    List of Ingredients




    14 ounces pasta of your choice
    3 tablespoons extra virgin olive oil
    1 cup Cabaret crackers, roughly crushed
    2 cloves garlic
    2 tablespoons rosemary
    2 tablespoons shredded lemon rind
    1 cup pitted olives of your choice
    freshly ground black pepper to taste

    Cook pasta al dente. While the pasta is cooking, heat 2 tablespoons of oil in a frying pan over medium to high heat. Add cracker crumbs to pan, cook until golden, and set aside. Carefully wipe down the frying pan. Place the remaining tablespoon of olive oil and sliced garlic in pan. After a minute, add rosemary, lemon rind, olives and a dash of pepper. Cook for about 2-3 minutes or until warm. To serve, toss the olive mixture through the warm, drained pasta. Plate pasta then top with the cracker crumbs. Serve with a crisp green salad.

    Helpful Hint:
    Make Tuscan Pasta salad by using cooled shell or twist pasta and mixing in diced plum or sliced cherry tomatoes. Top with cubed mozzarella. Or, make a hearty Tuscan casserole by placing mixed pasta into a deep dish, adding cheese of your choice and topping with crisped cracker crumbs before baking.
