    Baked Sweet Potatoes

    A new favorite of mine!

    List of Ingredients

    4 medium sweet potatoes, washed and pierced with fork
    1 (8 oz) can crushed pineapple,drained
    1/4 cup dried cranberries, soft
    1/4 cup butter (1/2 stick)
    1/2 cup packed dark brown sugar
    1 tsp
    Dash freshly grated nutmeg
    1/2 teaspoon sea salt

    TOPPING
    Brown Sugar
    Cinnamon
    Chopped Pecans

    Recipe

    Preheat oven to 400 degrees. Place potatoes on a baking sheet (do this incase they "leak") and bake for 60 minutes or until fork-tender. In a bowl, combine remaining ingredients and mix well.

    Slice about 1/2 inch off the top of each potato and scoop out the pulp, leaving about 1/4 inch of potato inside the shells. Place potato pulp in the bowl with the pineapple mixture and mix well then spoon mixture into the potato shells and return shells to the baking sheet. Bake potatoes for 20 to 25 minutes, or until heated through. Serves 4

    TOPPING: You can take a mixture of brown sugar, cinnamon and chopped pecans and top each potato with it. Do this just before the 2nd baking.
