Mandarin Orange, Spinach & Almond Salad

Recipe Introduction
A colorful spring salad, crunchy and different.
List of Ingredients
1 bag spinach leaves (10 oz bag fresh
spinach) washed and drained
1 can mandarin oranges in light syrup (11 oz) 2 tbsp
juice reserved
1/2 cup extra virgin olive oil
3 tablespoons balsamic vinegar
1/4 cup almonds, honey-roasted, sliversRecipe
In a salad bowl, combine spinach and mandarin oranges. In another bowl, whisk together oil, vinegar and reserved juice. Pour the dressing over the spinach and oranges and toss gently. Top with almonds.
