1 pkg Italian sausage links (hot or mild) cooked as package directs and thinly sliced on bias
8 Individual Foccacia breads, *
1/2 pound Provolone cheese, thinly sliced
1 small Red Onion, thinly Sliced
1/2 pound Spinach Leaves, washed and drained (press as much water as you can off the leaves)
1/2 cup Creamy Italian salad dressingRecipe
Cut Focaccia horizontally and brush with dressing.
Layer each sandwich with Cheese, Spinach, Onion, Sausage, and Cheese again, pressing down on each layer.
Spray heavy skillet or griddle with non-stick oil, and toast sandwiches on both sides, pressing down with back of spatula Makes 8 Sandwiches.
*I prefer ciabbata bread.
