Low-Fat Pesto

Recipe Introduction
A delicious topping for pasta, pesto typically is high in fat due to generous amounts of cheese and nuts. This low-fat version highlights fresh herbs instead.
List of Ingredients
2 cups fresh basil leaves, chopped
1 cup fresh flat-leaf parsley, chopped
1/4 cup bread crumbs, toasted *see Note
2 tablespoons grated Parmesan cheese
2 cloves garlic, minced
3 tablespoons miso (light) *see Note
1/4 cup water (1/4 to 1/3)Recipe
IN A FOOD PROCESSOR, combine the basil, parsley, bread crumbs, Parmesan, garlic and miso; pulse until the mixture is finely minced. With the machine running, add water until the pesto is smooth and creamy. Serves 6
Notes:
You can make your own bread crumbs by cutting fresh bread into cubes. Then place them on a baking sheet and bake at 350°F until crisp, about 15 to 20 minutes. Process the cubes in a blender or food processor until finely ground.
*Miso is a salty paste made from cooked, aged soybeans and sometimes grains. It's thick yet spreadable. It may be spread thinly on bread for a savory snack or used for flavoring various dishes and as a soup base. Miso comes in many varieties. As a rule, the darker varieties are saltier and more strongly flavored than the lighter ones.
