Stuffed Acorn Squash

List of Ingredients
1 acorn squash, halved and seeded
1/3 cup bread crumbs
1/4 cup brown sugar, packed
3 tablespoons chopped pecans
2 tablespoons butter, softened
1/2 apple, cored, peeled and diced
3 tablespoons dried cranberries, sweetened
Recipe
Place both halves of squash cut-side down in a baking dish filled with 1/4 to 1/2 inch of water; bake at 325 degrees for 30 to 40 minutes, or until tender. Combine remaining ingredients together in a small bowl; set aside. Remove squash halves from oven; turn cut-side up. Spoon filling into centers; bake an additional 15 to 20 minutes. Serves 2.
