    STEW: Curried Beef Stew

    Pillsbury Soup & Crockpot Recipes/Feb 2000

    List of Ingredients

    1 c small whole onions, peeled
    1 c fresh baby carrots
    12 small new potatoes, cut in half (about 4 C)
    2 lb boneless beef chuck steak, cut into 1 1/2" pieces
    1 (14.5 oz) can diced tomatoes, undrained
    1/2 c apple juice
    4 tsp curry powder
    1/2 tsp salt
    1/4 tsp pepper

    Recipe

    In a 3 1/2 to 4-quart crockpot, layer onions, carrots & potatoes. Place beef over vegetables. In a medium bowl, combine all remaining ingredients & mix well. Pour over beef. Cover & cook on LOW setting for 8 to 10 hrs. Makes 6 (1 1/2 cup) servings.

    Per serving: 280 calories, 7 gr fat, 4 gr fiber, 30 gr protein

    Ingredient Substitution: Larger potatoes can be substituted for the small new potatoes. Cut them into 1" pieces (use about 4 cups).

    Serving Suggestion: To make a hearty meal of this thick stew, serve it with warmed pita bread and hot tea.
