    Refried Bean Soup

    List of Ingredients

    1 can crushed tomatoes (28 oz) *see notes
    1 clove garlic, minced
    1 small onion, peeled and chopped
    1 can reduced-fat chicken broth (13.75 - 15 oz)
    2 cans fat-free refried beans (15 oz ea)
    Salt and pepper, to taste (optional)

    Recipe

    In large saucepan combine tomatoes, garlic, and onion. Stir to combine. Add beans and stir until mixed. Bring to a boil, boil for 5 minutes. Add broth and simmer uncovered for 15 minutes. Serves 5

    You can take out about a cup of soup & puree with a hand blender for a creamier soup.

    Notes:
    Crushed tomatoes with green chilies make a great addition to this soup, as is using fat-free refried beans with lime and chilies or vegetarian beans.

    Also using taco seasoning in place of the salt/pepper is good. Or try adding some New Mexico Chili Powder with the salt/pepper.
