Salt-Crusted Baby Potatoes

This has to be one of the simplest recipes in the world, but people remember these crusty little new potatoes when more elaborate dishes are long forgotten. They're marvelous with fish, and perfect for Mediterranean dishes or well-sauced and spicy meals. Don't forget to pass the butter!
List of Ingredients
24 new potatoes, red or white
2 teaspoons coarse salt, or to taste (2 to 3)
coarsely ground pepper
1/4 cup minced fresh parsley
6 tablespoons unsalted butter, cut into 6 slicesRecipe
Put potatoes in a large saucepan, cover with cold water, cover & bring to a boil over high heat. Reduce heat & simmer until the potatoes are only fork-tender, 15 to 20 minutes. Drain & return potatoes to the pot. Shake the pot until the moisture is completely gone, then salt the potatoes while you shake them around in the pot. When salt begins to adhere to the potatoes, stop; don't overdo the salt! Scatter the pepper & parsley over the potatoes and serve each portion accompanied by a pat of butter. Serves 4 to 6
