List of Ingredients
2 large red potatoes, scrubbed
1 small red onion, diced
1/2 green & orange bell pepper, chopped
Scallions, chopped
1/8 teaspoon each of: Cumin, Chili Powder, Garlic Powder, Oregano, Basil
Kosher salt & coarse black pepper
Fresh cilantro, opt
Olive oil
Roma tomatoes, diced
Whole wheat tortillas, warmed
Garnish: Salsa & Limes
Recipe
Dice up potatoes & cook in a lightly oiled skillet till almost done. Add onions, bell pepper, and scallions and brown. Add all seasonings. Add in diced tomatoes. Cook until potatoes are tender. Add fresh cilantro last, if desired. Place potato mixture into warm tortillas. Then garnish with salsa and/or fresh lime juice.
