Creamy Mushroom Stroganoff

10 ounces fettucine, uncooked
3 tbsp light butter
1/3 cup flour
1 package fresh mushrooms (8 oz) sliced any variety
1/4 cup chopped shallots
3 cloves garlic, minced (3 to 4)
1 1/2 cups skim milk
1/2 cup dry white wine
2 tbsp finely chopped fresh parsley
1/4 tsp salt (1/4 to 1/2)
fettucine, prepared as directed and kept hot/warmRecipe
Prepare fettuccine according to package directions. Drain, rinse with hot water, and keep warm. In a medium nonstick skillet, melt butter over medium heat. Stir in flour until crumbly. Add mushrooms, shallots, & garlic. Cook until mixture is browned, stirring frequently, about 12 to 15 minutes. Gradually add milk and wine. Stir constantly until mixture is smooth and comes to a boil. Boil for 1 minute. Stir in parsley & salt. Serve immediately over fettuccine.
