    2 pt ~ Mock Coconut Cream Pie

    Modified recipe from WW Favorite Recipes Cookbook

    List of Ingredients

    2 cups spaghetti squash, cooked & into strands
    1 cup skim milk
    1 cup Egg Beaters® 99% egg substitute
    1/2 cup evaporated skim milk
    1/4 cup flour
    1/4 cup sugar
    2 tablespoons reduced-calorie margarine, plus 2 tsps
    1/2 teaspoon vanilla
    1/2 teaspoon coconut extract
    1/2 teaspoon double-acting baking powder

    Recipe

    Preheat oven to 350°. Spray a 9" pie plate with nonstick cooking spray. Using a back of a spoon, spread squash over bottom & up sides of plate. Set aside. In blender combine remaining ingredients & blend until smooth. Pour mixture over squash. Bake 50 minutes to 1 hr or until knife inserted in center comes out clean. Cool pie on rack & let stand for 1 hr. Cover with plastic wrap and refrigerate overnight. Serves 8. (2 WW POINTS per slice)
