    This is a quick and dirty version of the recipe in Saveur.

    List of Ingredients




    2 large poblanos, roasted, skinned, seeded and cut into strips. (Can use canned whole green chiles).
    Salsa fresca
    2 1/'2 cups cooked,drained and pureed (with a little water) black beans. (Can use canned).
    Cilantro
    4 6-inch corn tortillas
    4 eggs (can use 8 eggs)
    1/2 cup crema or sour cream
    1/3 lb gouda grated. (Can substitute pepper jack cheese)

    Recipe



    Lay tortillas of a parchment lined sheet pan. Spread bean puree over the tortillas. Fry eggs sunny side up in butter. Place eggs on top of bean puree. Top eggs with salsa, chile strips, crema, cilantro and finally cheese on top.
    Broil in broiler until bubbling and lightly browned - about 5 minutes. Serve hot.
