Adapted from Agua Verde paddle club and cafe, Seattle
List of Ingredients
1 pound halibut fillets
Lemon pepper seasoning
12 (6-inch) corn tortillas
Salsa fresca
1 cup chopped cabbage
1/2 cup chopped cucumber
juice of half of a lime
Salt and Black Pepper
Creamy avocado sauce:
1 avocado - diced
4 green onions, chopped
2 - 3 cloves garlic, chopped
1/2 cup sour cream
1 cups mayonnaise
1 - 2 teaspoon green habanero sauce (red works just fine)
1 teaspoon apple cider vinegar
1 teaspoon lemon pepper
Recipe
Combine cabbage, cucumber and lime juice in a bowl. Season to taste with salt and pepper and let sit while preparing the fish
Spray a grill or charcoal broiler with pan coating. Season the fillets with lemon pepper and cook for approximately 15 minutes, turning once. Fillets should be white throughout and flaky, but not overcooked. Alternatively you can sear fillet in a nonstick pan and finish in a 400 degree oven for about 12 - 15 minutes depending on thickness of fish. When finished, flake into a bowl.
To make creamy avocado sauce: Mix all of the ingredients together in a medium sized bowl.
