Orzo Shrimp Salad with Feta

List of Ingredients
Dressing:
6 tablespoons extra virgin olive oil
6 tablespoons red wine vinegar
4 tablespoons freshly squeezed lime juice
2 jalapeno pepper,coarsely chopped (leave in ribs and seeds if heat is desired)
4 garlic cloves
2 teaspoon Dijon mustard
1 teaspoon sugar
1 tsp ground cumin
freshly ground black pepper to taste
salt, to taste
Salad:
1 cup orzo
1 Lb raw shelled shrimp
pinch of red pepper flakes
1/2 cup green olives, chopped
1 bunch green onion diced
4 oz feta cheese, crumbled
12 oz cherry or grape tomatoes, halved
1/2 cup cilantro, chopped
Recipe
Dressing:
Put everything into a blender or food processor and puree until smooth. Taste and adjust seasonings if needed.
Salad:
Cook orzo in a large pot of boiling salted water until just tender. Drain well and put in a large bowl.
Stir in about 3/4 of the dressing and let orzo cool.
Meanwhile salt and pepper the shrimp, add red pepper flakes and saute until just done. let cool a bit.
Mix shrimp, olives, green onion, feta, tomatoes and cilantro into orzo. Mix in remainder of dressing and adjust salt and pepper.
