    Gingered Shrimp and Snow Pea Soup

    makes 4 servings

    List of Ingredients

    4 cups vegetable or chicken broth
    1/4 cup fresh ginger, sliced
    1/2 tsp cayenne pepper (or more to taste)
    1 lb shrimp, peeled and deveined
    2 cups snow peas
    1 lemon, cut into wedges
    4 tbl cilantro, chopped

    Recipe

    Simmer ginger in broth for 15 minutes.
    strain out ginger.
    add cayenne and snow peas to broth and simmer covered for 5 minutes.
    add shrimp and cook until firm - about 3 minutes
    Squeeze lemon wedges into individual soup bowls and garnish with cilantro.
