    Watermellon Rind Pickles

    • 4 qts prepared watermellon rind
    • 1 cup salt (not iodized)
    • 2 qts cold water
    • 2 tbs whole cloves
    • 3 sticks cinnamon
    • 3 pieces ginger root or 1/2 tsp ground ginger
    • 1 lemon thinly sliced
    • 8 cups sugar
    • 1 qt white vinegar
    • 1 qt water


    Instructions


    1. Trim dark skin and pink flesh from thick watermellon rind. Cut in 1 inch pieces
    2. Dissolve salt in 2 qts water. Pour over rind and let stand for 6 hrs
    3. Drain water, and rinse. Cover rinds with cold water. Cook until just tender; drain
    4. Tie spices in cheese cloth and compbine with remaining ingredients. Simmer 10 minutes
    5. Add watermellon rind and simmer until clear
    6. Add boiling water if syrup becomes too thick before rind is clear.
    7. Remove spice bag. Pack bioling hot into hot jars, leaving 1/4 space. Adjust caps and process 10 minutes
