    Quick & Easy Lasagna

    Source of Recipe

Mark (Dad) with help from the internet.

    Recipe Introduction

Quick & Easy says it all.

    List of Ingredients

    • 12 ounces ground beef
    • 2-1/2 cups spaghetti sauce
    • 6 lasagna noodles
    • 1-1/2 cups cottage cheese
    • 1-1/2 cups shredded mozzarella cheese (6 ounces)
    • 2 tablespoons grated Parmesan cheese (optional)

    Recipe

    1. Cook meat in a large skillet over medium-high heat until no pink color is left in meat, stirring occasionally with a wooden spoon and breaking up the meat. Drain and put in a medium size bowl.

2.Spoon 1 cup of the spaghetti sauce in the bottom of a 2-quart rectangular baking dish. Stir remaining spaghetti sauce into meat in skillet. Cook over medium heat until hot, stirring occasionally with a wooden spoon. Remove meat mixture from heat.

3.Place 2 uncooked noodles on sauce in bottom of dish. Spread one-third of the meat mixture on top of noodles. Spread 3/4 cup of the cottage cheese over meat. Sprinkle 1/2 cup of the mozzarella cheese over cottage cheese. Add another layer of 2 uncooked noodles, one-third of the meat mixture, the rest of the cottage cheese, and 1/2 cup of the mozzarella cheese. Layer remaining uncooked noodles, meat mixture, and mozzarella cheese. Finally, sprinkle Parmesan cheese over top, if you like.

4.Cover baking dish with foil. Bake in a 350 degree F oven for 1 hour. Remove from oven and let stand on a cooling rack with foil cover in place for 15 minutes. Carefully remove foil from dish so steam escapes away from you. Makes 6 servings.

Notes: I used 16 ounces (1 lb.) ground beef. Added salt, pepper, onion pwdr. & garlic pwdr.
2 ½ cups of spaghetti sauce is 20 ounces, the typical quantity in a store bought can or bottle is 1 lb. 10 ounces, or (26 ounces) I used almost the whole thing.
A medium size container of cottage cheese is 2 cups (16 ounces) Use the whole thing.
Use as much mozzarella as you like, I used closer to 3 cups.
I cooked it per the directions with the exception of letting it stand after one hour. I took the foil off and cooked uncovered for another 15 minutes.
The end result was fairly bland but very good (Great for kids). Also the kind of sauce you use will make a difference as far as being bland or spicy, I used Ragu original just to get a base line.
