    Summer sausage is a delicious treat for your family or guests. It is easy to make and only takes a few ingredients. Your homemade Summer Sausage will be a hit with everyone!


    List of Ingredients




    • 5-pounds hamburger (it's better to use inexpensive hamburger with the fat in it)
    • 5 teaspoons Morton Tender Quick Salt
    • 2-1/2 teaspoons Mustard seed or powder
    • 2-1/2 teaspoons coarse Black Pepper
    • 2-1/2 teaspoons Garlic salt
    • 1 teaspoon Hickory Smoked Salt

    Recipe



    Mix the hamburger, tender quick salt, mustard seed or powder, coarse black pepper, garlic salt and hickory smoked salt together well.
    Cover the mixture and refrigerate it for three days. Once each day take the mixture out of the refrigerator and mix it well.
    On the fourth day mix the mixture well and form it into 5 rolls. Lay the rolls on a rack in a broiler pan; so any fat will drip off. Bake the rolls for 8 hours at 175 degrees. When the rolls are cooled wrap them in waxed paper or foil and refrigerate until ready to eat.

    Dad Notes: Can use 2 ½ pounds fatty hamburger and 2 ½ pounds Elk or Venison.
    Don’t use just venison or elk unless you get some ground beef fat to add to it.
