    List of Ingredients




    4 lrg skins, crisped or fried & hot
    ½ C butter {1 stick}
    3 egg yolks
    2 tsp lemon juice
    dash or two of cayenne
    4~8 slices Canadian bacon
    4 whole eggs
    paprika

    Recipe



    MAKE HOLLANDAISE SAUCE:
    Melt the butter in a small saucepan til bubbly. In a blender, combine the egg yolks, lemon juice & cayenne til well mixed. Remove the center cover of the blender and add the hot melted butter in a very slow stream, blending on low til nice & thick. Cover & keep warm.

    Poach the 4 whole eggs n’ lightly sauté the bacon slices til hot.

    To assemble: Place 1 or 2 bacon slices on each skin. Top w/poached egg, then some Hollandaise Sauce.
    Dust w/paprika, and serve promptly.
