    These are just as good as the expensive ones you get at Red Lobster!

    List of Ingredients




    12 to 15 large fresh mushrooms ( I get the ones at Costco that are really huge)

    2 Tablespoons of butter

    2 Tablespoons of finely chopped onion

    1 Tablespoon lemon juice

    1/4 teaspoon dried basil

    salt and pepper to taste

    4 ounces of bulk Italian sausage (I used Jimmy Dean Sage sausage and it was really good, I also used a bit more as we like ours REALLY stuffed!)

    1 Tablespoon parsley

    (can add some garlic powder if you like)

    1/2 cup bread crumbs

    2 Tablespoons grated parmesan cheese

    Remove the stems from the mushrooms, set caps aside. Finely chop the stems, place them on paper towels and squeese them to remove any liquid. In a skillet, heat 4 1/2 teaspoons of butter. Saute the chopped stems and onion until tender. Add lemon juice, basil, salt and pepper. Cook until most of the liquid has evaporated. Cool slightly. Add the sausage and parsley (sausage is raw)and mix. Stuff the sausage mixture into the mushroom caps. Place them in a greased baking dish. Combine the bread crumbs and parmesean cheese. I added a bit of melted butter and some paprika. Also, I have made these when I was out of the parmesan cheese and I just topped the stuffing with bacon bits). You can melt a bit more butter and drizzle over the tops of the mushrooms. Bake, uncovered, at 400 degrees for 20 minutes, basting occasionally with pan juices. Serve hot.
