    Grilled Naked Burritos

    You will need one grill-type pan/plate/ (about any style will work) to cook the meat, on the grill. And one hamburger patty per child in house**

    The Rice--Layer One:
    1 cup White Rice, quick cooking
    3 Tbsp chopped Fresh Cilantro
    3 tsp Lime juice

    Cook rice as directed but without butter or oil. Salt and water only. Fluff with fork. Allow rice to cool 15 minutes, then toss with the cilantro and lime juice. Set aside.

    The Beans--Layer 2:
    1 15oz can Black Beans or Pinto Beans
    Heat on the stovetop. Keep warm.

    The Steak--Layer 3:
    1 lb. Sirloin steak
    2 tsp. Goya Adobo All purpose Seasoning (without pepper - the blue cap)

    Rub seasoning into steak, cut into small pieces.

    **About those burgers--The little ones may need something else to eat.

    To Prepare. Place burgers on one Side of the grill, over medium high heat. After abt 5 mins, place your grill pan on rack to get hot. Put Steak into pan, and cook to desired doneness, turning over often. Watch the burgers. The small pieces of sirloin are on the grill such a short time, the burgers smoke it up & make your steak super! ie...the burger solution.


    The Mild Salsa-Layer 4:
    10 Roma Tomatoes, diced small
    1 med. Red Onion, finely chopped
    2 Jalapeno's, seeded, finely chopped
    1 med. green bell pepper, finely chopped
    1 tsp salt, kosher is good
    2 cloves garlic-minced
    1/2 cup Fresh chopped Cilantro or Parsley
    3 Tbsp Lime Juice

    Chop the vegetables, place in large bowl and toss with salt. Chill in the refrigerator at least 2 hours before serving. Stir salsa several times. Can be made the day before. You’ll have leftovers and you’ll like it ;-)

    The Toppings-Layer 5:
    1 cup finely shredded Provolone cheese
    1 8oz carton Sour Cream, that you have thinned down with a little water. Just enough
    to make it pour-able

    To Plate: *G*
    Use a large plate or a pie pan style works well. Start with a serving of rice. Add a serving of beans next, then a serving of steak. Top with as much salsa as you like, sour cream and cheese Add lime wedges to the plate.
    To Die For!
