    Beef Stroganoff from BH&G

    List of Ingredients

    1 tbsp. flour
    1/2 tsp. salt
    1 pound beef sirloin in ¼" strips
    2 tbsp. butter
    1 cup sliced mushrooms
    1/2 cup chopped onion
    1 clove minced garlic
    2 tbsp. butter
    3 tbsp. flour
    3 - 4 tbsp tomato juice
    1¼ cups beef broth
    1 cup sour cream
    2 tbsp. sherry
    parsley sprigs for garnish

    Recipe

    Combine 1 tbsp. flour and 1/2 tsp. salt, dredge beef strips in it. Melt 2 tbsp. butter in skillet and quickly saute beef strips. Add mushrooms, onion and garlic, cook 3-4 minutes until onion is just tender.

    Remove meat and mushrooms from skillet. Add 2 tbsp. butter to pan drippings, blend in 3 tbsp. flour and tomato juice.

    Slowly add beef broth and cook, stirring constantly, until mixture thickens. Return meat and mushrooms to skillet, add sour cream and sherry, warm to serving temperature.

    Serve over wide egg noodles, garnish with sprigs of parsley.
