    Beef Stroganoff

    List of Ingredients

    3 T butter
    1 large onion, sliced
    1/2 lb. fresh mushrooms, sliced
    2 lbs. round steak 1/2" thick
    4 T shortening or cooking oil
    1 1/4 c boiling water
    1 beef bouillon cube
    3/4 c medium dry red wine
    5 T sweet rice flour
    1/4 t pepper
    1 t salt
    2 T Worcestershire sauce
    4 T tomato paste
    1 bay leaf
    1/2 t thyme
    1 c sour cream
    3 cups hot cooked rice

    Recipe

    Saute onions and mushrooms in butter. Cut meat in strips and shake in a bag containing flour, salt, and pepper.

    Brown meat in shortening or oil in a large frying pan. Add bouillon cube dissolved in boiling water. Stir in wine, Worcestershire sauce, and tomato paste. Add onions and mushrooms, bay leaf, and thyme. Cover and simmer one hour. (The mixture may be frozen at this stage, for one to two weeks.)

    Before serving, add sour cream. Serve over hot rice.

    Serves 6.
