Beef and Potato Loaf

List of Ingredients
4 cups peeled, thinly sliced potatoes
1 tablespoon chopped onion
1 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon parsley flakes
1 pound lean ground beef
3/4 cup evaporated milk
1/2 cup finely crushed saltine cracker crumbs (or oats)
1/4 cup ketchup or chili sauce
1/4 cup chopped onions
1 teaspoon salt
1/8 teaspoon black pepper
Recipe
In greased 2-quart baking dish, layer potatoes and 1 tablespoon chopped onion. Sprinkle with 1 teaspoon salt, 1/8 teaspoon black pepper and parsley flakes.
In a large bowl, mix ground beef, milk, cracker crumbs, ketchup, 1/4 cup chopped onions, 1 teaspoon salt and 1/8 teaspoon black pepper. Spread evenly over the potatoes.
Decorate top with more ketchup, if desired. Bake in 350-degree oven 1 hour, until potatoes are tender.
Makes 4 servings.
