    1 bone-in Sirloin Steak- 1¾ lbs; 3/4" thick
    1/3 c. Worchestershire Sauce
    3/4 c. Lemon Juice
    2 tsp fresh ground black pepper
    2 tsp salt
    2 tsp celery salt
    1/2 tsp Tabasco sauce
    2 T. Vodka---optional
    2 T. Vegetable oil
    3/4 c. tomato juice
    2 tsp. tomato paste
    1 T. Water
    1 T. Cornstarch

    Recipe



    Bring steak to room temperature and pat dry.

    To make Bloody Mary Base, combine worchestershire, lemon juice, pepper, salt, celery salt, Tabasco, and vodka if used in a small bowl. Stir well.

    Combine 1/3 cup of the mixture and the oil in a large dish or baggie. Add the steak and turn to coat both sides. Marinade for 30 mins at room temp, turning once. Cover and refrigerate for 30 mins. prior to cooking.

    Combine another 1/3 cup of the bloody mary mix with the tomato juice in a small saucepan. Stir in tomato paste and bring to a boil for 5 mins. stirring often. Remove from heat & set aside.

    Just before serving, about 10 mins. Make a slurry by stirring the cornstarch into the water in a small jar and shake. Next, reheat the sauce to a boil and pour in the slurry.

    When ready to grill, remove steak from marinade and pat dry. Grill about 4 mins on each side over a hot grill for rare, or 3 more mins for medium-rare.

    Transfer to a cutting board and let rest 5 mins. before slicing into strips. Spoon some of the sauce over each plate and put the rest in a bowl and serve at the table.

    Now, mix the rest of the sauce with vodka and you're set! ;-)
