    2 tablespoons vegetable oil, divided
    2 pounds ground turkey
    1/3 cup ketchup
    1 large sweet green pepper, whole, cored, seeded, and finely chopped
    2 celery ribs, finely chopped
    1 tablespoon Cajun seasoning
    1/2 teaspoon onion salt
    1/2 teaspoon hot pepper sauce
    2 pounds sweet potatoes, peeled and cut into 1/3" thick half-moons
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1/4 cup salsa

    Recipe



    1. Heat oven to 350. Coat large roasting pan with 1 tablespoon oil.

    2. In a large bowl, mix next seven ingredients. Shape into 9x4 inch oval loaf and place in roasting pan.

    3. In another large bowl, combine sweet potatoes, remaining oil, salt and pepper. Spoon potoates around meatloaf in pan.

    4. Bake at 350 for 65 to 70 minutes or until internal temperature of meat loaf registers 160 on an instant read thermometer and potatoes are tender. For last 10 minutes of cooking, spoon salsa evenly over top of meat loaf.
