Easy Braised Short Ribs

List of Ingredients
4 lbs. beef short ribs
salt and pepper to taste
2 Tbsp. olive oil
2 small onions, sliced
2 carrots, peeled and sliced (I used 4)
2 garlic cloves, minced (I used 4)
1 15 oz. can peeled tomatoes with juice
1 5 or 6 oz. can of tomato paste
1/4 cup red wine vinegar (I used red wine!)
1 tsp. Italian Herb mix
2 Tbsp. sugar (I used 1)
2 cups beef stock
1/2 cup fresh parsley or 2 Tbsp. dried parsley flakes
Recipe
Preheat oven to 350. In a large covered dutch oven, heat the olive oil over medium high heat. Season the ribs with salt and pepper and brown in batches. Once the ribs are browned, remove them to paper towels and set aside. Add the remaining ingredients to the pot. Stir well, add the browned ribs, cover and cook in the oven for 2 hours. (after they came out of the oven, I skimmed off alot of the fat that had floated to the top of the sauce.)
