    Awesome Chuck Roast from Ell

    Recipe Introduction

    (actually sliced 'brown' BBQ beef) This is tender enough to shred. We use it for sandwiches, mostly, on a hamburger bun topped w/cole slaw. Good weekend dish.

    List of Ingredients

    3 to 4lb boneless chuck roast
    1/4 cup liquid smoke
    1/4 cup olive oil
    2 cloves garlic, crushed
    1/3 cup soy sauce
    3 TBSP wine vinegar
    1/4 cup brown sugar
    1 TBSP Worcestershire
    1/4 cup bourbon
    1/2 tsp seasoned salt

    Recipe

    Day before serving: Marinate roast in liquid smoke for abt 1 hr. Blend rest of ingredients and put in ziplok bag with roast. Soak overnight, turning a few times. (Last time I mar. in LS for 1 hr., put in rest of ingred and mar. for 4 hrs, put in oven and had for dinner.)

    Next day, remove roast and set in heavy foil (or a few thicknesses of reg. foil). Pour half of marinade over and close tightly. Bake at 300 for 3 hrs.

    Simmer rest of marinade for abt 5 min to thicken a little.

    Remove roast from oven, discard juice and fat (or de-fat and keep). Slice thinly. Pour remaining sauce over and serve.
