    Roast Beef II

    1 beef roast (rump, top round or otherwise)

    Brown the beef in a pan w/bit of oil then put in small roaster pan.

    Add:
    1 lrg onion cut up in big pieces
    4 carrots cut in large pieces
    3 celery stalks cut in large pieces

    Heat 4 C beef broth w/bay leaves to a boil & let boil for a bit before pouring over everything.

    Cover with lid {or foil} & roast 45 minutes in 350° oven; then pull out & flip roast over.

    Cover & return to oven for 30 minutes or so til temp. gauge registers med~rare in middle.

    Pull out, make gravy outta that lush broth

    I make a roux with butter/flour first then add broth a ladle at a time n let slow simmer stirrin almost constant til thick n bubbly & there ya go!!
