    Porcupine Meatballs III

    2 beaten eggs
    1/2 cup milk
    2 lbs. ground beef
    2 tbsp. finely chopped green pepper
    2 tbsp. finely chopped onion
    1/2 cup raw rice
    1 tsp. salt
    1/2 tsp. pepper
    1 cup dry bread crumbs
    1 can condensed cream of tomato soup
    2/3 cup water

    Recipe



    Combine eggs, milk, ground beef, green pepper, onion, rice & seasonings, and mix very well. Shape into balls and coat with bread crumbs. Brown in hot oil. Combine soup and water; blend until smooth.

    Place meatballs in a large baking dish and pour soup over. Bake at 350° about 1 hour, depending how big you make the meatballs - larger ones may need more cooking time.

    If you're watching carbs, you can omit the bread crumbs.
