3 to 4 lbs. chuck roast or any beef roast (I prefer chuck)
Sauce:
1/2 cup water
1/2 cup ketchup
1/4 cup red wine
2 Tbls. red wine vinegar
3 cloves garlic or more, minced
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dry mustard
1/2 tsp. celery salt
1/2 tsp. chili powder

Sear the roast over high heat in a dutch oven in a little oil till it is brown on all sides. Remove from heat.
Mix the sauce ingredients and pour over roast. Cover and bake in 325 degree oven for about 2 to 2 1/2 hours until tender.
Thicken juices into gravy and serve with garlic mashed potatoes.
