Applesauce Oat Muffins

List of Ingredients
1½ cups quick-cooking oats
1¼ cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup 1% low-fat milk
3 tablespoons vegetable oil
1 egg white
TOPPING:
1/4 cup quick cooking oats
1 tablespoon brown sugar
1/8 teaspoon cinnamon
1 tablespoon butter or margarine, melted Recipe
1. Preheat oven to 400°. Spray muffin cups with nonstick cook spray or line with paper cups.
2. In a large mixing bowl, combine the first seven ingredients.
3. In another bowl, combine the applesauce, milk, oil, and egg white. Stir into dry ingredients just until moistened.
4. Fill muffin cups three-fourths full.
5. Combine topping ingredients; sprinkle over batter.
6. Bake for 16-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack.
Makes 10-12 muffins.
