2 1/4 c. lowfat Bisquick baking mix
3 Tbls. brown sugar
3 Tbls. melted butter
2/3 c. skim milk
Recipe
Stir together the baking mix and brown sugar until no lumps are left, then add the melted butter and milk. Stir with a fork just until moistened. Drop by spoon onto ungreased baking sheet to make 8 mounds. Bake at 425 degrees for 10 to 12 minutes or until light brown. Cool slightly, then split and top with fresh strawberries. May add whipped cream if desired (but I was out of it and they were great just plain). I bet these would also be good with fresh, sliced peaches when they come in season.
