Burst o Lemon Muffins

List of Ingredients
1 ¾ C all-purpose flour
¾ C sugar
1 tsp baking powder
¾ tsp baking soda
¼ tsp salt
1 C lemon or vanilla yogurt {8oz}
1 egg
1/3 C butter {margarine} melted
1~2 T grated lemon peel
1 T lemon juice’
½ C flaked coconut
TOPPING:
1/3 C lemon juice
¼ C sugar
¼ C flaked coconut, toasted
Recipe
In lrg bowl, combine the flour, sugar, baking powder, baking soda n’ salt. In another bowl, beat the yogurt, egg, butter, lemon peel n’ juice til smooth; stir into dry ingredients just until moistened. Fold in coconut. Fill greased muffin cups 2/3’s full. Bake at 400° for 18~22 min’s or til golden brown n’ muffins test done.
Cool for 5 min’s before removing from pan to a wire rack. In a saucepan, combine lemon juice and sugar; cook n’ stir until sugar is dissolved. Stir in coconut. Using a toothpick, poke 6~8 holes in ea muffin. Spoon coconut mix over muffins. Serve warm or cool to room temp.
