Cheeseburger Muffins

Recipe Introduction
Need to add Bacon! Makes 24 (mine only made 20)
List of Ingredients
1/2 pound ground beef
1 small onion, finely chopped
2 1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup ketchup
3/4 cup milk
1/2 cup butter or margarine, melted
2 eggs
1 teaspoon prepared mustard
2 cups shredded cheddar cheese
Recipe
1. Preheat oven to 425. Grease 2 regular-size muffin tins.
2. In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
3. In a bowl, combine flour, sugar, baking powder, and salt. In another bowl, combine ketchup, milk, butter, eggs, and mustard. Stir into dry ingredients just until moistened.
4. Fold in beef mixture and cheese. Fill muffin cups 3/4 full.
5. Bake at 425 for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
6. Refrigerate leftovers. (I put about half of mine in the deep freeze for longer storage.)
