Cinnamon Raisin Bread

1 cup warm milk
3/4 cup warm water
1/3 cup melted butter or margarine
6 1/2 - 7 1/2 cups bread flour
6 tbsp. sugar
1 1/2 tsp. salt
2 pkgs. active dry yeast
3 eggs, at room temperature
1 cup raisins
1/2 cup sugar
2 tsp. ground cinnamon
2 tbsp. melted butter or margarine
1 egg white, slightly beaten
Recipe
Combine milk, water & 1/3 cup melted butter. In another large bowl or the bowl of your mixer, combine 6 cups flour, 6 tbsp. sugar, salt & yeast; gradually add eggs and the warm liquids mixture, mixing for about 3 minutes. Knead in remaining flour as needed, 1/2 cup at a time, until mixture is stiff & not sticky. Continue kneading for 7 - 10 minutes, until dough is smooth & elastic. Place in greased bowl, turning to grease the top of the dough; cover and allow to rise in a warm draft-free location until double in bulk - about 35 minutes.
Combine 1/2 cup sugar and cinnamon in a small bowl; set aside.
When dough is risen, punch it down & divide in half. Roll each half into a 9”x14” rectangle. Brush the rectangles with melted butter & sprinkle with raisins, followed by sprinkling with the sugar/cinnamon mixture. Starting at narrow end, roll dough tightly and shape into loaves. Place in greased loaf pans; cover and allow to rise in a warm draft-free location until double in bulk - about 35 minutes. Bake at 375 about 45 mins.
