Feather-light Buttermilk Pancakes

1 cup flour
2 tbsp. sugar
2 tbsp. baking powder
1/4 tsp. baking soda
4 tbsp. buttermilk solids
1 beaten egg
1 - 1¼ cup milk or water
2 tbsp. vegetable oilRecipe
Sift dry ingredients together. Add wet ingredients and mix just until blended. Fry on hot griddle until bubbles form and edges begin to set; flip and cook until golden on second side. Serve with toppings of choice.
Fresh buttermilk may be substituted for the buttermilk solids & water.
