Garden Angel Biscuits

List of Ingredients
1 cup buttermilk or sour milk
1 package active dry yeast
2 tablespoons warm water 105°-115°
2 1/2 cups all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable shortening or lard
1/4 cup carrot finely shredded
2 tablespoons parsley finely chopped
2 tablespoons green onion finely chopped
Recipe
In a small mixing bowl dissolve the yeast in warm water. Let stand 5 mins.
Meanwhile, in a large mixing bowl stir together flour, sugar, baking powder, baking soda, & salt. Using a pastry blender, cut in shortening or lard till mixture resembles coarse crumbs. Stir in Carrot, Parsley, & green onion. Make a well in center of dry mixture, then add softened yeast and buttermilk or sour milk all at once.
Using a fork, stir just till moistened.
Turn dough out onto a well-floured surface & knead GENTLY, folding & pressing for 6-8 strokes or til dough is NEARLY smooth. Pat or lightly roll dough to 1/2-inch & cut with floured cutter (or glass), dipping cutter into flour between cuts.
Place biscuits on ungreased baking sheet. Bake at 450° for 10-12 mins or till biscuits are done.
Serve hot
My note: Don't over-work dough ~ will tend to make biscuits "tough"
