Oatmeal Dried Cherry Scones

2 cups stone-ground whole wheat flour
1-3/4 cups old-fashioned oatmeal
3/4 teaspoon baking soda
1-1/2 teaspoons baking powder
1/4 cup plus 1 tablespoon sugar
12 tablespoons (1-1/2 sticks) unsalted cold butter, cut into pieces
2/3 cup (3 oz. pkg.) dried cherries
1/2 cup buttermilk
Raw brown sugar or KA sparkling white sugar, for sprinklingRecipe
Preheat the oven to 375°. Lightly grease a cookie sheet.
Combine the flour, oats, baking soda, baking powder, and sugar in a large bowl. Cut in the butter with 2 knives (can also use pastry blender) until coarse crumbs form. Stir in the dried cherries and buttermilk until the mixture is evenly moistened, then knead the dough in the bowl until it holds together. Put dough on the cookie sheet and shape into a 9-inch disk. Score into 8 wedges and sprinkle with raw brown or sparkling white sugar. Bake for 18 to 20 minutes, until a toothpick poked in the middle of a scone comes out clean.
Serve immediately or wrap and store for up to 2 days.
Makes 8 scones.
