    Apple Streusel Muffins

    List of Ingredients

    2 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup butter (softened)
    1 cup white sugar
    2 eggs
    1 & 1/4 teaspoons vanilla extract
    1 & 1/2 cup chopped apples

    Streusel topping:
    1/3 cup packed brown sugar
    1 tablespoon all purpose flour
    1/8 teaspoon ground cinnamon
    1 tablespoon butter (chilled)

    Recipe

    1. Preheat oven to 375º. Grease 12 cup muffin tin.

    2. Mix flour, baking powder, baking soda, and salt in a medium bowl.

    3. In a large bowl, beat together butter, sugar, and eggs until smooth. Stir in apples; gradually blend in flour. Spoon mixture into the prepared muffin tin.

    4. In a small bowl, mix brown sugar, flour, and cinnamon. Cut butter into the mixture until it forms coarse crumbs. Sprinkle over top of mixture in muffin tins.

    5. Bake 20 minutes in preheated oven, or until a toothpick inserted in the center comes out clean. Allow muffins to sit 5 minutes before removing from pan. Cool on a wire rack.
