    Guilt-free Oatmeal Pancakes

    Serves 4. A useful guideline is 1 c. of oats and 1 c. milk per 2 persons.

    These pancakes have very little sugar and use canola oil, hence the name. We have also made them without either sugar or oil for folks with special dietary needs.
    2 cups rolled oats
    2 cups milk
    Mix above 2 ingredients and refrigerate overnight.

    2 eggs slightly beaten
    1/8 cup canola oil
    1/4 cup raisins)
    1/2 cup flour
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    2 Tablespoons sugar

    The next morning, preheat the griddle to a medium high setting. Stir eggs, oil and raisins into the oatmeal until well blended.

    In another bowl mix flour sugar, baking powder, soda, and cinnamon. Add to oats mixture and mix. Batter will be thick.

    Drop by large spoonfuls on griddle. Serve with butter and warm maple syrup. Apple or other fruit toppings are good as well or serve with large portion of mixed fresh fruit in season.

    Good with turkey sausage.
