    List of Ingredients




    1 cup mashed bananas (about 2 medium)
    3/4 cup sugar
    1/3 cup unsweetened applesauce
    3 tablespoons canola oil
    1 large egg
    3/4 cup all-purpose flour
    3/4 cup whole wheat flour
    1/2 cup quick-cooking oats
    1/2 teaspoon cinnamon
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/3 cup chopped dates
    1/4 cup walnuts, finely chopped
    1 teaspoon grated lemon peel

    Recipe



    1. Preheat oven to 350. Coat miniature muffin tin with cooking spray or use paper liners.

    2. In large bowl, beat bananas, sugar, applesauce, oil, and egg until well blended. Combine flours, oats, cinnamon, baking powder, baking soda, and salt.

    3. Gradually beat flour mixture into banana mixture until well blended. Stir in dates, walnuts, and lemon peel.

    4. Fill cups of tin about half full with batter. Bake at 350 for 12 to 14 minutes or until toothpick inserted in middle comes out clean. Cool in pan 5 minutes before removing from pan to wire rack.
