    List of Ingredients




    6 C Strawberries -- Hulled
    1 1/4 C Sugar
    2 Tbsp Cornstarch
    1/2 C Water
    1-2 Drops Red Food Coloring
    1 Pkg-3 Oz Cream Cheese -- Softened
    1 Tsp Lemon Rind
    1 Graham Cracker Pie Crust, 9 Inch

    Recipe



    Mash enough strawberries to measure 1 cup.

    Mix sugar and cornstarch in a 2-qt. saucepan. Gradually water and mashed strawberries, add food
    coloring. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute; cool.

    Beat cream cheese with lemon rind until smooth; spread in pie crust.

    Fill crust with remaining strawberries. Pour cooked strawberries mix over top.

    Refrigerate about 3 hours or until set. Cover and refrigerate any remaining pie.
