    Hot Fudge Filling & Chocolate Frosting

    List of Ingredients

    Hot Fudge Filling:
    2 ounces unsweetened chocolate
    2 Tbsp unsalted butter
    5 Tbsp plus 1 1/2 tsp sugar
    6 Tbsp hot water
    1/2 tsp vanilla extract

    Fudge Frosting:
    4 ounces unsweetened chocolate
    3/4 cup evaporated milk
    1 cup sugar

    Recipe

    Hot Fudge Filling:
    Place all the ingredients except the vanilla in the top of a double boiler placed over simmering water and cook uncovered, stirring occasionally, unitl the chocolate is melted and the sugar is dissolved , 30 minutes. The mixture will be smooth and velvety.

    Pour the fudge into a small bowl stir in the vanilla, and refigerate until the mixture is thick and of spreading consistency, 2 hours

    Ok now I have to admit the thought of hanging around for 30 mins with this filling made me mental SO I did it in the microwave in about half the time. There are a few tricks though. First of all I had it at high power for about 2 mins to melt the chocolate and make it smooth, the I zapped it at about 70 percent power at 40 second intervals until I got it velevty!! The way you can tell it's done is it turns a lighter chocolate color and is slighty thicken. It should look kind of like hot fudge sauce!! It will thicken up as it cools. I doubled the filling for the 3 layer cake!!

    Fudge Frosting:
    Melt the chocolate in the top of a double boiler placed over simmer water. cool slightly. ( I used the microwave!!)
    Blend the evaporated milk and sugar in a blender on medium speed for 2 seconds

    Add the chocolate to the sugar mixture in the blender and blend on high speed until the frosting is thick and shiny, 1 to 1 1/2 minutes. The blender's sound will change when the frosting is thickened.

    Spoon the frosting into a bowl and allow it to set at room tempetature for 30 mins. Then cover the bowl with plastic wrap and allow the frosting to set for 1 hour more before frosting.

    Do not refrigerate the frosting even if you don't plan to use it for several days!! I love this frosting!!! It sounds so strange but honestly it has a great chocolate taste that's not too sweet. I hope you all like it as much as we do!!
