    2 cups all-purpose flour
    1 1/2 cups sugar
    3 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 cup milk
    1 teaspoon vanilla
    2 eggs

    Recipe




    Heat oven to 350 degrees. Grease and flour a glass baking pan 13x9x2. Measure all ingredients in a large mixing bowl. Blend for 1/2 minute on low speed, scraping bowl occasionally, then on high speed about 2 minutes or until smooth. This cake does not need to be fluffy. The more solid the better. Bake until done, about 35 minutes or until wooden toothpick inserted in center comes out clean. When completely cool, cut into cubes or rectangles; whatever size you want your cakes to be.

    I grind salted peanuts in a hand food grinder with the smallest size grinder to make enough to fill a 9x9 pan 3/4 inch level high with nuts.

    I make a glaze or icing to cover the cubes or rectangles of cake so the ground peanuts stick.

    Icing: 2 cups confectioners' sugar
    1/2 teaspoon vanilla
    2 to 4 tablespoons milk

    Blend sugar sugar and vanilla. Stir in milk 1 tablespoon at a time, until icing is of proper consistency. The consistency must be thick enough to apply to the cakes but not too thick . Apply the icing with a knife to the cut sides of the cake first, then dip into the nuts. Pat the nuts onto the cakes so they will stick. Apply the icing to the top and if you want to the bottom of the cake and apply the nuts to the rest to make your "Moco Cake" It is very sticky and your fingers get covered with icing and nuts. I try to keep one hand dry and the other hand to hold the cake.
