    Two Crust Pineapple Pie

    This is one of my favorite pies, is great with a scoop of vanilla ice cream and a cup of coffee...

    List of Ingredients

    2 cups crushed pineapple, slightly drained
    1 cup sugar
    3 Tablespoons flour
    1/4 teaspoon salt
    1 egg yolk (save the white to glaze the top crust of pie)
    2 Tablespoons butter

    Recipe

    Mix all the above ingredients together and pour into pie shell. Cover with upper crust. Brush the top crust with egg white and sprinkle sugar on top. Bake 10 minutes at 450 degrees and then 30 minutes at 350 degrees. Cool on wire rack.

    I make my own crust and use lard since that is how my Granny taught me but you can use boughten crusts too.
