Cajun Casserole

List of Ingredients
1 lb. low-fat smoked sausage, cut into 1/4-inch slices (recipe called for 8 oz.)
1 small onion, diced
1 celery rib, diced
1/2 large green bell pepper, diced (recipe called for 1 large pepper, cut into thin strips)
2 garlic cloves, minced
1 (14.5 oz.) can diced tomatoes with jalapenos (S.L. used diced tomatoes with garlic, basil, and oregano)
1 (14-oz.) can fat-free chicken broth
1-3/4 teaspoons Cajun/Creole seasoning
1/8 to 1/2 teaspoon red pepper flakes (recipe called for ground red pepper)
3/4 cup uncooked long-grain rice
3/4 lb. chicken breasts, cubed (S.L. called for 1 lb. cooked med. shrimp, peeled and deveined)Recipe
Saute smoked sausage in a large nonstick skillet over medium-high heat 3 to 4 minutes or until browned. Remove and add chicken. Cook until browned. Remove.
Add onion, celery, green pepper, and garlic; saute 2 to 3 minutes.
Add tomatoes, chicken broth,and seasonings; bring to a boil. Stir in rice; cover, reduce heat to low, and simmer 15 to 20 minutes or until liquid is absorbed. Add cooked sausage and chicken*. Heat through.
*If you're using shrimp instead of chicken, stir in when liquid is absorbed and cook 3 to 5 minutes or just until shrimp turn pink.
