    1 pkg. hot dogs, sliced into chunks
    1 tsp. butter
    1-1/2 tsp. flour
    2 cups whole milk
    1 cup shredded cheddar cheese
    1 Tbs. minced yellow onion
    6 medium potatoes, cooked and "chunked"
    Salt and pepper to taste

    In a saucepan over medium heat, melt 1 teaspoon butter. Stir in 1-1/2 teaspoons flour to make a roux. Stir in 2 cups whole milk. Grate 1 cup shredded cheddar cheese to make 1-1/2 cups. Stir cheese and 1 tablespoon minced onion into roux mixture. Add 1 package of sliced hot dog chunks and 6 medium cooked and chunked potatoes. Stir to coat evenly. Place entire mixture into oiled 9-inch by 13-inch casserole dish. Cover with foil and bake for 45 minutes in a preheated 325-degree oven. Remove the foil and bake for an additional 15 minutes to brown the top. Serve hot.

    Serves 4.
