Lasagna-style Enchiladas

I've been making my enchiladas in a lasagna method.
I put a little enchilada sauce down first in my casserole dish (Old ElPaso makes one or you can go homemade..I do either).

After the sauce, put some corn tortillas in (I cut to cover the layer). Sometimes using flour tortillas is fun and it's a bit more filling.

Then put the beef or chicken you've cooked and seasoned to taste (cumin, onions, pepper, garlic, seasoned salt or just prepared taco seasoning). Top with sauce and more tortillas, then a bit more sauce and extra sharp cheddar cheese and diced onion.
